關於 大湖清酒

《大湖》清酒在過往未曾公開發售,身為一個偉大清酒家族
的兒子,我的使命就是匯聚父親、祖父以至先祖對釀造的愛
和熱誠,再將之帶到香港。

我的父親是一個忠誠的釀酒師,由於對劣質清酒的厭惡,他
多次拒絕來自東京和大阪等大城市的提價。父親深信售價上
的惡性競爭是導致劣品存在的主要原因,故此,擁有337年
歷史的優質《大湖》清酒,一直只能在滋賀縣長濱市的當地
品嚐。

經過19年的游說,今天,我終於突破這個界限,能將我們珍
視的清酒與海外朋友分享。

除了高質素的米和水源,執著人手釀造的傳統亦是我們釀酒
師的座右銘。

《大湖》清酒是集合8所釀酒工場傳統的成果。時至今天,
仍然有不少遺跡可證明我們自1672年以來的歷史。雖然父親
在我的小時候為《大湖》清酒建立了一個新形象,但吉川家
的釀酒歷史其實可追溯至戰國時代──有證據顯示早在500
年前的武士時期,我的先祖已開始釀酒了。

釀酒的傳統承襲了近20代,我們堅持使用最上乘的山田錦、
五百萬石和雄町作酒米,以連接大阪、神戶和京都的伊吹山
上的天然泉水作水源。而流傳多代的人手釀造技術已成為《
大湖》清酒的重要標誌。

我的父母、祖父母和造酒工場內的人都有美麗白晢的皮膚。
事實上,在一些化粧品公司發現酒粕的護膚功效前,造酒工
場的人並不知道這個秘密。由那時開始,酒粕經常缺貨,一
般人無法購買。

《大湖》清酒既不含人造物質,亦有醫學證明清酒對皮膚的
益處,清酒已有絕對的原因去贏取女士的芳心了。

About Taiko Sake

Taiko sake is not distributed to the public via any trading
companies. We only present our products to you directly.

Being the son of a great sake hierarchy, my mission is to
compile the love and passion of brewing (from my father,
grandfather and ancestors) and bring to the world through my
own company Josen(HK) Ltd.

My dad was a very keen brewer; he strongly believed that
price competition is the key factor of poor sake thus the
goodness of Taiko’s 337 years history can only be tasted in
the local Nagahama city of Shiga prefecture.

After 20 years of persuading, I have finally broke the ice and
able to share our treasure with my beloved friends outside
Japan.

Beside high quality rice and water, craftsmanship is our
brewer’s traditional motto.

Taiko sake is the end product of a cellar with traditions of 8
brewing companies; in fact there are still evidences that prove
our 337 years history.

Although my father has created a new image for Taiko when I
was still a boy, the actual brewing history of the Yoshikawa
family can be tracked long past before the Japanese Civil War
period. There are evidences that my ancestors were already
brewers in the Samurai period over 500 years ago.

The family tradition of near 20 generations has continued
running until today. We still use quality rice from Yamada
Nishiki, Gohakumangoku and Omachi.

We use underground natural mineral water that originated
from Mountain Ibuki, which connects Osaka, Kobe and
Kyoto to the Biwako Lake.

The craftsmanship has been a tradition that was passed dow
to us for many generations and it is the key identity of
today’s Taiko.

Taiko sake contains no artificial substance and with medical
proofs that sake is good for health, we have every reason to
win the hearts of sake lovers.
